Says Damewood, \"I wrote Trulli Italian to offer unpretentious menus and methods to prepare authentic Italian pasta dishes in the home-made style from the region of Apulia in Southern Italy. My main effort is to translate the ingredients found in Italy to the American table to the greatest extent possible.\"
Damewood adds, \"Included in Trulli Italian is a comprehensive shopping list, which will allow you to go to your local supermarket and buy most all of the ingredients in one trip for the recipes contained within this cookbook. I also will list the minimum types of utensils needed in an Italian kitchen, which herbs and spices to stock, how to use them and the different types of cheeses used in Italy.\"
Clay Damewood (Pentassuglia) has lived in Northern and southern Italy for over 6 years and has traveled all over Italy gathering the secrets of simple yet genuine Italian pasta preparation. In his cookbook he demonstrates how off-the-shelf ingredients found in American supermarkets can be used to quickly assemble complete meals for the family. Clay is a graduate of Wake Forest University, served as a major in the United States Army and currently works in telecommunications at the United States Senate.
